During the Great Plague, those who were “Marked” received a X painted on their door. The “Mark” signified you were known to have the Plague.
The Mark 2021(6.5%abv) - A blend of French Oak red wine barrel aged sour ales, from 2019 and 2020 vintages, fermented with local wild yeast strains then conditioned on sweet Bing Cherries and Red Raspberries.
Process - In February of 2021 we blended the base beer vintages from barrel stock with sweet Bing Cherries and Red Raspberries, for a tertiary fermentation. After fermentation, we decided to condition the final beer on a second addition of the cherries and raspberries with hopes of retaining the bright fruit characteristics. The beer was then horizontally matured in bottles to reduce stress on the yeast, providing a balanced flavor of lush fruit and local wild yeast nuances.
Tasting Notes - A bright spritzy white head a top of a spectrum of reds and pinkish hues, this 2021 vintage opens with bursting berry aromas, strawberry hard candy and delicate nuances of funky barnyard, with a faint spring water minerality. The flavor profile evolves from initial sweet cherry then into a dominant red raspberry, with a tart medium sourness, closing with some barrel notes and a quick background earthiness, reminiscent of truffle. The finish is dry with a mild tannic draw and light chalkiness, ending with a citrusy characteristic almost like Apricot.
